RECIPE NAME: OATMEAL CRAISIN COOKIES

INGREDIENTS:
2 sticks margarine-softened

1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs

1 tsp. vanilla
1-1/2 cups all-purpose flour
1 tsp. baking soda
1 t cinnamon

3 c oats (quick or old fashioned, uncooked)
1 c craisins

HOW TO MAKE THIS:
Preheat oven to 350. Beat together margarine and sugars until creamy.
Add eggs and vanilla; beat well
Add combined flour, baking soda, cinnamon; mix well
Stir in oats and craisins; mix well
Drop by rounded tablespoonfuls onto ungreased cookie sheet
Bake 10-12 minutes or until golden brown
Cool 1 minute on cookie sheet; move to wire rack

MY TIP:
Substitute ½ c craisins with ½ c chopped, dried apricots.
You can also add chopped pecans.
