RECIPE NAME: CHERRY MACAROONS

INGREDIENTS:
½ c. butter, softened
½ c. shortening

1 c. sugar

2 eggs

1 tsp. almond extract
2 1/2 c. flour
1 tsp. baking poweder
1 tsp. salt
½ c. chopped cherries
2 c. shredded coconut
1 c. chopped pecans or walnuts (optional)

HOW TO MAKE THIS:
Cream together butter and shortening. Gradually
add sugar, mix well. Add eggs and almond extract,
beat well. Blend in flour, baking powder and salt.
Stir in cherries, coconut, and nuts. Drop by rounded
teaspoons onto lightly greased baking sheets. Bake
in oven (preheated to 350) for 10 – 12 mins. or until
lightly browned.

MY TIP:
Drain the maraschino cherries well before dicing.
